ABSTRACT:
The study aims at extracting oil from the seeds of Brussels sprouts, estimating the amount of omega 3 fatty acid and formulation of oil pellets. The oil is expected to have a high concentration of omega 3 fatty acid, which therefore can be a good alternative for cod liver oil. The oil may also contain other important nutrients like Vitamin A, C, K, antioxidants, etc. Using the principles of Molecular Gastronomy, the extracted oil is converted to pellets. These pellets can be an excellent immune booster since it is a good source of many of the major nutrients required by the human body.
